Week 2: Peanut Butter S’mores Sandwich Biscuits

Week 2, biscuit week, was another good’un and, whilst we’re still getting used to the ad breaks, we’re loving Noel and Sandy presenting alongside Paul who is on top form as always.

We often tend to fall in to the pattern of making signature challenge bakes during our bake off recipe series, but we were instantly in love with the idea of sandwiching biscuits with marshmallow after we saw Stacey’s chocolate and marshmallow sandwich biscuits (how gorgeous were they by the way?!). When we think marshmallow, our minds immediately go to s’mores, but we were also keen on a peanut butter flavour, so why not combine both??


To start with you need to make you peanut butter biscuit, this is just a simple cookie recipe with a whole load of peanut butter in it! Cream your butter and sugar, add the egg and peanut butter and then mix in the flour. once you’ve got your dough then you need to divide it up into 16 balls, and then flatten them with your hands, this recipe shouldn’t mean the biscuits change shape much in the oven so you need them to be nice and flat before they go in.

After you biscuits are baked, we need to sandwich them with some marshmallow. Full respect to Stacey for making her own, but seeing as we weren’t under the scrutinous eye of Paul Hollywood, we’re using some shop bought marshmallows and melting them a little. To do this you just need so nice big marshmallow, place half your biscuits on a tray upside down, pop a mallow on top and heat in the oven until they’re all gooey. Whilst still hot, sandwich with another biscuit and allow to cool and set a little, be careful as the biscuits get soft and fragile when they’re hot!


We then dipped ours in some milk chocolate to complete the s’more flavour! And then to add a little extra peanut-y goodness we sprinkled over some crushed peanuts!

 

Peanut Butter S'mores Sandwich Biscuits

For the peanut butter cookies
  1. 100g butter
  2. 200g light brown sugar
  3. 1 egg
  4. 250g peanut butter
  5. 200g plain flour
To decorate
  1. 16 large white marshmallows
  2. 150g milk chocolate
  3. 25g chopped peanuts (optional)
For the peanut butter cookies
  1. Cream together your butter and sugar until pale and fluffy.
  2. Add the egg and peanut butter and mix again.
  3. Then add in the flour and mix until everything is well combined.
  4. Divide your dough into 32 balls and flatten them out into large discs with your hands.
  5. Place on a lined tray and bake for 12-15 mins at 180C (160 fan).
To decorate
  1. Once cooled, place half of your biscuits upside down on baking tray and place 1 marshmallow on top of each one.
  2. Put in the oven at 180-200C for a couple of minute until the marshmallows begin to melt.
  3. Take them out and sandwich another cookie on top of each one.
  4. Melt your chocolate and dip your cookie sandwiches to half cover them. Place on a sheet of baking parchment to set and sprinkle with some of the chopped peanuts.
